Make Animals From Your Ground Sirloin; Turtle Burgers

So my husband decided to combine various meats into this lovely turtle you see before you. He was really into it. I tried to talk him in to just making regular cheese burgers, but he was dead set. Once I realized it meant I was off the hook for making dinner, I was really into it with him. I have to admit, it was fun to watch my Jenni and her dorm roommate seeing their dinner for the first time. Giggles abound. Here is the recipe he used. Great idea for kids parties (even college aged kids). You are gonna need lots of meat, my friends.

Chili Verde Crock Pot Recipe – SCRUMPTOUS!

Never had I used a tomatillo before making this dish (ok… I didn’t actually know what one was). I am now a fan. This “chili” uses 1 inch cubed lean pork loin, fresh cilantro, cumin and is amazing.
Ingredients: (I made enough of this to completely fill my crockpot. I freeze leftovers, and I knew I would love this dish. You can halve this recipe and still serve a family 6 easily).

1.5 lbs lean boneless lean pork, cut into 1 inch cubes
30 oz Great Northern Beans, rinsed and drained
30 oz Chicken broth
2 lbs fresh tomatillos, husks removed, chopped coarsely
2 medium onions, halved and thinly sliced
7 oz can diced green chiles
10 cloves garlic, minced
2 tsp ground cumin
1 cup fresh cilantro, chopped
salt and pepper to taste

instructions:
In large, heated frying pan, place cubed pork, leaving until browned on all sides.
Combine remaining ingredients (except for cilantro) in crock pot and add browned pork to this. Cook on High in crock pot for 3-4 hours. Stir in fresh cilantro and enjoy! We added shredded cheddar and tortilla chips. Oh happiness!!

YUMMY Blast From The Past: Crock Pot Sloppy Joe Recipe

I had to share this crock pot treasure I recently made. To good to keep to myself!

You will need:

3 lbs ground beef or ground turkey (for a healthier version… I used beef)
1 cup chopped onion
3 cloves garlic, minced
1 1/4 cup ketchup
1/3 cup worcestershire sauce
1/4 cup packed dark brown suger
3 tbsp yellow mustard
3 tbsp vinegar
1 cup chopped red bell pepper
2 teaspoons chili powder

Instructions: Combine beef, onion and garlic in large pan and cook until meat browned and onion tender. In crockpot, combine remaining ingredients, stir together, add browned meat/onion/garlic to crockpot, stir until mixed. Cook on low for 7-8 hours, or on high for 3-4 hours. Serve atop toasted hamburger buns. Enjoy!

Easy No-bake Cookie Recipe


These are my usual contribution to pitch ins and parties. People absolutely love them. I like to promote them as being calorie free, but you will find out the truth when you read the following recipe…

Ingredients:
1 cup milk
2 sticks butter
4 cups sugar
1 cup peanut butter (i use crunchy)
2 tsp vanilla extract
6 cups Quick Oats
4 tablespoons unsweetened cocoa powder
(the above measurements make a mountain of cookies – depending on how you size them when you drop them on wax paper, about 70. You can halve the recipe if you don’t need that many, but in my experience, they disappear like magic)!
Directions:
Put 1st three ingredients in sauce pan and heat to a rolling boil, while stirring. When it comes to a rolling boil, wait onc minute and remove from heat. While waiting for that to boil, combine remaining ingredients in mixing bowl. After removing the saucepan from heat, pour in dry ingredients and stir until mixed. Line counter tops with wax paper and drop mixture into dallops onto the paper. Let stand until cookies harden. Usually about 1 hour.
Note: If cookies don’t set up, you didn’t let them boil at a roll for a full minute. If they are too dry, you let them boil too long.
